  1. Prepare 6 of bone in chicken thighs.
  2. It's of Olive oil.
  3. You need 3 tsp of mixed Italian herbs.
  4. You need of Salt and pepper.
  5. Prepare of (Creamy bacon, mushroom & thyme sauce).
  6. Prepare of Olive oil.
  7. It's 2 of & 1/2 cups sliced mushroom.
  8. Prepare 200 g of chopped bacon.
  9. It's 300 ml of heavy cream.
  10. Prepare 1/4 tsp of salt.
  11. It's 1/4 tsp of pepper.
  12. It's 1 tsp of garlic powder.
  13. It's 1 Tbsp of fresh thyme leaves, chopped.
  14. You need 1 Tbsp of fresh chopped parsley.

Creamy Bacon, Mushroom & Thyme Chicken step by step

  1. Pre-heat oven to 180*C. In a fry pan on high heat, brown chicken in batches and set aside. When all done- sprinkle with Italian herbs, salt & pepper. Throw in oven for around 25 minutes or until cooked through..
  2. Meanwhile- fry bacon and set aside..
  3. Then sauté mushrooms with a little olive oil..
  4. Return the bacon to the pan along with cream, salt, thyme, pepper and garlic salt. Simmer until sauce thickens slightly..
  5. Add the chicken to sauce- and serve immediately- with mash or pasta. Enjoy!!.
