Cream of Mushroom soup Cream of mushroom soup has been a favorite of mine as long as I can remember. Of course when we were growing up it was Campbell's and it came in a can. Homemade Cream of Mushroom Soup is full flavoured and so easy to make, you won't buy soup in a can again!

Ingredients of Cream of Mushroom soup

  1. It's 150 g of White Mushroom.
  2. Prepare 150 g of Chestnut Mushroom.
  3. You need 30 g of onion.
  4. You need 2 cloves of garlic.
  5. It's 500 ml of Chicken Stock.
  6. Prepare 15 g of flour.
  7. You need 50 ml of Double cream.
  8. Prepare of Salt and Pepper.
  9. Prepare of Parsley.
  10. Prepare of Oil.

Cream of Mushroom soup instructions

  1. Chop mushrooms, onion and garlic into small pieces and set aside..
  2. Heat oil in the saucepan, add chopped onion and garlic and cook until tender. Then, add in mushrooms and cook for 10 mins until mushrooms are browned and soften..
  3. Remove the liquid from the mushrooms and add in flour. Stir the mixture until all the flour is disappeared..
  4. Then slowly add in Chicken stock and simmer for 15 min in low heat. Add in salt and pepper to adjust the taste..
  5. When the soup has be simmered for 15 min, use a hand blender to blend the soup until smooth. Then, simmer it for another 5 min in low heat..
  6. Now, add in cream and mix well. Serve the soup on a bowl and top with parsley..
