Every cook needs a good easy creamy mushroom sauce recipe.

Ingredients of Creamy Mushroom and Biltong Soup
- Prepare 1 tbsp of olive oil, extra virgin.
- Prepare 3/4 of red / yellow baby pepper finely diced.
- Prepare 1 of small onion finely chopped.
- You need 3/4 tbsp of crushed garlic.
- Prepare 1 of punet button mushrooms.
- You need 1 1/2 tsp of mixed dried herbs.
- Prepare of salt and freshly ground black pepper.
- It's 250 ml of fresh cream.
- It's 250 ml of full cream / whole milk.
- It's 250 ml of water.
- Prepare 1 of chicken stock pot / cube.
- You need 1/2 cup of biltong (I've used game biltong sliced- you may substitute with fried bacon bits).
Creamy Mushroom and Biltong Soup step by step
- Heat oil in a pan and add in onion and chopped pepper. Sauté until onion is translucent and pepper is soft then stir in garlic..
- Add in sliced mushrooms (cut in half then sliced).
- Sauté until cooked. Season with very little salt (stock will be added later), some freshly ground black pepper and mixed dried herbs..
- Mix in cream, milk,water and stock and allow to simmer for about 7 - 10 minutes..
- Before serving mix in biltong / bacon bits..
- Serve with garlic and chillie roastie or toasted garlic bread.
Cream of mushroom soup has been a favorite of mine as long as I can remember. Of course when we were growing up it was Campbell's and it came in a can. Mushroom cream soup was one of my favorites growing up so I'm so glad to have this dairy-free alternative that's honestly so good you don't miss the cream at all. I cooked the mushrooms in batches to avoid the "steaming" problem one reviewer had. I also went heavier on the mushrooms, probably.
