Cream of mushroom soup has been a favorite of mine as long as I can remember. Of course when we were growing up it was Campbell's and it came in a can. Homemade Cream of Mushroom Soup is full flavoured and so easy to make, you won't buy soup in a can again!

Ingredients of Cream of Mushroom Soup

  1. It's 32 oz of fresh mushrooms.
  2. It's 1/4 cup of parsley.
  3. It's 1/4 cup of chive.
  4. Prepare 1 large of minced garlic.
  5. It's 1 small of minced garlic.
  6. Prepare 1 stick of butter.
  7. It's 4 tbsp of flour.
  8. It's 2 box of chicken broth.
  9. Prepare 2 small of heavy cream.
  10. It's 1 of chili powder.
  11. You need 1 of black pepper.
  12. You need 1 of garlic salt.
  13. You need of optional.
  14. Prepare 1/2 cup of dry sherry OR more broth OR water.

Cream of Mushroom Soup step by step

  1. Wash mushrooms and chop coarsely..
  2. Heat butter in 3-quart saucepan..
  3. Sautée mushrooms and large garlic jar for about 5 minutes. Sprinkle flour to coat..
  4. Add 1 3/4 boxes of broth gradually, stirring constantly..
  5. Add parsley, *sherry, chili powder, pepper, salt and remaining garlic, all to taste, which for me means "a crapload." Bring to boil..
  6. Remove from heat and stir in cream..

My daughter-in-law, a gourmet cook, served this cream of mushroom soup recipe as the first course for a holiday dinner. She received the recipe from her mom and graciously shared it with me.
